- 1 teaspoon cornstarch
- 300 ml heavy cream (minimum 30% fat content)
- 250 g mascarpone cheese
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- Fruit jam (e.g., raspberry, strawberry)
- Fresh raspberries for garnish
Instructions
- Preheat the oven to 130°C (265°F) and line a baking sheet with parchment paper.
- In a large bowl, whisk the egg whites until stiff peaks form. Gradually add the sugar while continuing to whisk until the mixture becomes glossy and thick.
- Add the white wine vinegar or lemon juice and cornstarch, and gently fold them into the meringue mixture using a spatula.
- On the prepared baking sheet, shape the meringue into a round layer, aiming for an even thickness. You can use a spatula to achieve a smooth shape.
- Place the baking sheet in the oven and bake the meringue for about 1.5 hours, until the outer layer is crispy and the inside is chewy. You can lower the oven temperature to 90°C (195°F) to prolong the baking time and achieve the desired texture.
- While the meringue is cooling, prepare the cream. In a separate bowl, whip the heavy cream until stiff peaks form. In another bowl, mix the mascarpone cheese, powdered sugar, and vanilla extract. Then gently fold the whipped cream into the mascarpone mixture until smooth.
- Once the meringue has cooled, carefully transfer one layer to a serving platter or plate. Place a portion of the mascarpone cream in the center and spread it evenly, leaving a small margin around the edges.
- Spread fruit jam on top of the cream, gently spreading it and leaving space for the second layer of meringue.
- Place the second layer of meringue on top of the jam. Spread the remaining mascarpone cream on this layer.
- Garnish the top of the torte with fresh raspberries, creating an attractive design.
- Chill the torte in the refrigerator for a few hours to allow the cream to cool and set.
