Grilled Portobello Mushrooms (For Vegetarians)

Ingredients:

  • 4 large Portobello mushrooms
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley (for garnish, optional)

Instructions:

  1. Clean the Portobello mushrooms by gently wiping them with a damp cloth to remove any dirt. Remove the stems carefully.
  2. In a shallow dish, whisk together balsamic vinegar, olive oil, minced garlic, dried thyme, salt, and pepper to create the marinade.
  3. Place the mushrooms in the marinade, turning them to coat both sides evenly. Let them marinate for at least 30 minutes, allowing the flavors to infuse.
  4. Preheat your grill to medium-high heat. Brush the grill grates lightly with oil to prevent sticking.
  5. Place the marinated Portobello mushrooms on the grill, gill-side down. Grill for about 5-7 minutes on each side, or until they become tender and have grill marks.
  6. Once done, remove the mushrooms from the grill and garnish with fresh parsley if desired.
  7. Serve the grilled Portobello mushrooms as a main dish or use them to create a flavorful vegetarian burger. They are also great as a side dish with grilled vegetables or a fresh salad.

Barbecue Ribs (For Meat Lovers)

Ingredients:

  • 2 racks of pork baby back ribs
  • 1 cup BBQ sauce (store-bought or homemade)
  • 1 tablespoon brown sugar
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (adjust to your spice preference)
  • Salt and black pepper to taste

Instructions:

  1. Preheat your grill to indirect heat or set up a two-zone fire with high heat on one side and low heat on the other.
  2. Prepare the ribs by removing the membrane from the back of the ribs. Use a butter knife to lift a corner, then grip the membrane with a paper towel and peel it off.
  3. In a bowl, mix the brown sugar, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper to create the dry rub.
  4. Rub the dry rub mixture generously over both sides of the ribs, ensuring an even coating.
  5. Place the ribs on the low heat side of the grill or away from direct flames. Close the lid and let them cook for about 2 to 2.5 hours, or until the meat is tender and starts to pull away from the bones.
  6. During the last 15 minutes of grilling, baste the ribs with BBQ sauce on both sides, allowing the sauce to caramelize.
  7. Once done, remove the ribs from the grill and let them rest for a few minutes before slicing.
  8. Serve the mouthwatering barbecue ribs with additional BBQ sauce on the side, coleslaw, and cornbread for a classic and satisfying meal.
