500 g all-purpose flour

1 egg

200 ml warm water

1 teaspoon salt

2 tablespoons oil

Ingredients for the Filling

300 g cooked meat (beef, pork, or poultry)

1 onion

2 garlic cloves

Salt and pepper to taste

1 tablespoon oil or butter for frying

Caramelized Onions and Chives

2 large onions

1 tablespoon butter

1 tablespoon sugar

Fresh chives (for garnish)

Garlic-Dill Yogurt Sauce

200 g plain yogurt (preferably Greek yogurt)

1 garlic clove

1 tablespoon fresh dill (chopped)

Salt and pepper to taste

1 teaspoon lemon juice

Instructions

  1. Prepare the Dough
  • In a large bowl, mix the flour and salt.
  • Add the egg and oil, then gradually pour in the warm water, stirring the dough with a wooden spoon.
  • Once the ingredients are combined, knead the dough by hand until it becomes smooth and elastic (about 5-10 minutes).
  • Cover the dough with a cloth and let it rest for 30 minutes.
  1. Prepare the Filling
  • Mince or finely chop the cooked meat.
  • In a pan, heat a tablespoon of oil or butter, add the chopped onion, and cook until softened.
  • Add minced garlic and sauté for another minute, being careful not to burn it.
  • Combine the sautéed onions and garlic with the meat, mix well, and season with salt and pepper to taste. The filling should be flavorful but not too dry.
  • Set the filling aside to cool.
  1. Assemble the Dumplings
  • Roll out the dough into a thin sheet (about 2 mm thick).
  • Use a glass or round cutter to cut out circles of dough.
  • Place a teaspoon of filling in the center of each circle, fold the dough over, and press the edges firmly to seal the dumpling.

Place the finished dumplings on a floured surface.

  1. Cook the Dumplings
  • Bring a large pot of salted water to a boil.
  • Drop the dumplings into the boiling water in batches (so they don’t stick together).
  • Once the dumplings float to the surface, cook for 2-3 more minutes, then remove with a slotted spoon.

  • Slice the onions into thin strips.
  • In a pan, melt the butter, add the onions, and cook over low heat until they begin to turn golden (about 10 minutes).
  • Add the sugar and continue cooking for another 5-7 minutes until the onions are soft and caramelized. Remove from heat.
  1. Garlic-Dill Yogurt Sauce
  • In a small bowl, combine the yogurt with minced garlic, lemon juice, and dill.
  • Season with salt and pepper to taste.
  • Mix well and refrigerate to let the flavors meld.
  1. Serving

  • Serve the cooked dumplings topped with caramelized onions and freshly chopped chives.
  • On the side, provide the garlic-dill yogurt sauce, which perfectly complements the dumplings.
