- .5 kg beef, cut into cubes (e.g., chuck or stew meat)
- 2 onions, chopped
- 3 cloves garlic, finely chopped
- 2 carrots, sliced
- 2 red bell peppers, diced
- 2 tablespoons all-purpose flour
- 2 tablespoons tomato paste
- 500 ml beef broth
- 250 ml red wine
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon sweet paprika
- Salt and pepper to taste
- Vegetable oil for cooking
Instructions
- In a large pot, heat oil. Add the beef cubes and brown them on all sides. Once browned, transfer the meat to a plate.
- In the same pot, add more oil if needed and sauté the chopped onions until they become soft and translucent.
- Add the garlic and sauté for an additional minute until the garlic becomes fragrant.
- Sprinkle in the flour and stir for a few minutes until the flour is lightly browned.
- Return the browned beef to the pot. Add tomato paste, beef broth, red wine, bay leaves, dried thyme, sweet paprika, salt, and pepper. Mix well.
- Bring the mixture to a boil, then reduce the heat, cover the pot, and simmer the goulash for about 2-2.5 hours or until the meat is tender.
- Add the sliced carrots and diced bell peppers to the pot. Continue to simmer for an additional 30-40 minutes or until the vegetables are tender.
- Taste and adjust seasonings if necessary.
- Serve the goulash hot, ideally paired with potatoes, noodles, or pasta.
