Ingredients

For the crust

2½ cups all-purpose flour

1 teaspoon salt

1 tablespoon sugar

1 cup (2 sticks) cold butter, diced

6–8 tablespoons cold water

 

For the filling

6–7 large apples (preferably Granny Smith), peeled, cored, and thinly sliced

¾ cup sugar

2 tablespoons all-purpose flour

1 teaspoon cinnamon

Pinch of salt

1 tablespoon lemon juice

2 tablespoons butter, diced

Instructions

Preparing the crust

  1. In a large bowl, mix flour, salt, and sugar.
  2. Add the diced butter and gently work the mixture with your fingers or a pastry blender until it resembles coarse crumbs.
  3. Gradually add cold water, one tablespoon at a time, while gently mixing with a fork until the dough starts to come together.
  4. Gather the dough into a ball, divide it into two parts (one slightly larger), and wrap each part in plastic wrap. Chill in the refrigerator for at least 1 hour.

Preparing the filling

  • In a large bowl, combine the sliced apples, sugar, flour, cinnamon, salt, and lemon juice. Allow the mixture to sit for a moment to let the flavors meld.

Assembling and baking

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the larger portion of dough on a lightly floured surface into a round shape larger than your pie dish. Transfer the dough to the pie dish, gently lining the bottom and sides.
  3. Fill the pie crust with the apple mixture, spreading it evenly.
  4. Roll out the smaller portion of dough into a round shape. You can use leaf-shaped cookie cutters to cut out decorative leaves from the dough.
  5. Arrange the cut-out dough leaves on top of the apple filling, creating a decorative pattern.
  6. Press the edges of the two layers of dough together, sealing the pie. Crimp the edges with your fingers or a fork for a decorative finish.
  7. Brush the top crust with butter.

Baking

  • Place the pie in the preheated oven and bake for about 45-50 minutes, or until the crust is golden brown and the filling is bubbling and tender.
  • Remove from the oven and allow the pie to cool before serving. You can enjoy it on its own or with a scoop of vanilla ice cream.
