Ingredients

Yeast dough

  • 500 g wheat flour
  • 10 g dry yeast
  • 100 g sugar
  • 200 ml warm milk
  • 100 g butter, melted
  • 2 eggs
  • pinch of salt
  • zest grated from 1 lemon

Filling

  • 200 g good quality jam/confiture of any flavour

Alternative filling

  • 100 g ground nuts (e.g. walnuts, hazelnuts)
  • 100 g chopped dates
  • 2 tbsp honey
  • 1 teaspoon cinnamon
  • Additionally
  • 2 tbsp butter, melted (to spread on the croissants)
  • Icing sugar (to sprinkle on the croissants)

Instructions

  1. In a bowl, mix together the flour, dry yeast, sugar, and a pinch of salt.
  2. Add the warm milk, melted butter, eggs and lemon zest to the bowl with the dry ingredients.
  3. Mix the ingredients well until a uniform dough forms.
  4. Transfer the dough to a floured surface and knead for about 10 minutes until elastic and smooth.
  5. Transfer the dough to a bowl, cover with a cloth and leave in a warm place to rise for about 1 hour until doubled in bulk.
  6. Once the dough has risen, transfer it to a lightly floured surface and roll out into a rectangle about 0.5 cm thick.
  7. Jam filling: spread jam evenly over the surface of the dough, avoiding one edge.
  8. Nut and date filling: mix ground nuts, chopped dates, honey and cinnamon in a bowl to form a sweet filling. Spread the filling evenly over the surface of the pastry, avoiding one edge.
  9. Roll the dough from the long side into a roulade shape.
  10. Cut the roll into small triangular pieces, about 5-7 cm long.
  11. Place the rolls on a baking tray lined with baking paper, spacing them apart.
  12. leave the rolls on the baking tray to rise for around 20-30 minutes.
  13. Meanwhile, preheat the oven to 180°C.
  14. Once the rolls have risen, brush them with melted butter.
  15. Bake the croissants in the preheated oven for about 15-20 minutes, until golden.
  16. Take the croissants out of the oven and let them cool.
  17. Sprinkle the croissants generously with icing sugar before serving. Done!
